Here Comes The Dude? Wedding Planning Gets Manly

The season of ceaseless weddings is upon us, so Fast Company called up Chris Easter, cofounder of TheManRegistry.com, to find out if today’s men take an equal interest in planning their weddings. Easter argues that they can and do–and the rapidly growing revenues of his site are an indication that he’s right. Just don’t expect a special “50 Hottest Bridesmaids” feature on his website anytime soon.

FAST COMPANY: What’s TheManRegistry.com?

CHRIS EASTER: TheManRegistry.com is an e-commerce site and informational resource for soon-to-be-engaged or currently engaged men. The idea was originally, let’s create a men’s gift registry. Registries typically focus on the kitchen, the bathroom, the bedroom, but there’s nothing aimed at men: grills, camping equipment, man cave stuff. The idea evolved into an overall comprehensive e-resource.

There’s a stereotype that men are less into wedding planning than women.

There’s some truth to it traditionally. But couples are getting married at older ages, closer to thirty than in their early 20s, and so couples are spending more of their own money and less of mom and dad’s money on weddings. If I’m spending my money, I’m going to be more involved, more hands-on with vendors. Our company proves that men do care intimately about planning their weddings and just needed an outlet. A lot of what guys are getting involved in was unheard of 30 years ago.

For example?

A close friend of mine wrote some custom music for the procession. He put his own twist on it.

Did he do it with an electric guitar and smash it at the end?

I pushed for that. It would have made the YouTube hall of fame. No, he kept it classical, but with a bit of a twist. There was a violin.

Until recently Conde Nast alone had multiple bridal magazines. How did they not figure out there would also be a market for grooms?

That was our question. The issue for us is the for-men-by-men approach. There was a website back in the 90s that tried to target the groom, but it got acquired by Brides.com, which took too much of a female approach. TheManRegistry is by men. It’s like reading Men’s Health or Maxim.

A Maxim for married men? That’s not a contradiction in terms?

I give Maxim as an example of a male-centric magazine.

You don’t have a “50 Hottest Bridesmaids” issue planned?

We haven’t gone there yet. We push the envelope occasionally. We’ve had content on wedding sex, what to do if you’re a virgin, sex on your honeymoon. But we take the process very seriously. The wedding day is the biggest day of both of your lives, equally for the groom and bride.

What’s your business model?

The revenue is split between e-commerce sales–we have over 4,000 products on the site–and we’re also ad-supported. The wedding industry is a $40 billion industry, so there’s quite a bit of space to carve out a niche for grooms.

Does anyone take you to task for labeling certain products as being for men? Some women grill, and some men bake.

The Man Registry is about being a man by stepping up and being involved in the planning of your wedding. Being a man can mean a lot of things. Being a man is not about being out with your shirt off drinking beers. It’s about: This is the biggest day of your life, and if you’re not involved, that’s a problem.

Wedding Cakes in NYC With an Indian Touch

One of the highlights of planning my wedding a decade ago was choosing the cake. I had attended countless weddings where I felt that this standard dessert was an afterthought in both design and taste: the inside was usually a dry yellow while the exterior was a coat of sickly sweet buttercream with an uninspired design. I was determined to have a decadent sweet ending that would be memorable in taste and presentation and would indulge my love for chocolate.

The Indian Scene, as Seen From New York

Since my wedding was a traditional Hindu event, I wanted it to look Indian, but at the time, notable Indian cake designers seemed rare (at least in the New York City area). So I turned to Sylvia Weinstock, a well-known cake creator, who came up with a three-layer design with gold and pink hues to match my lengha and fulfilled my chocolate fantasy with an incredibly moist fudge interior.

A decade later, as the services for Indian weddings have increased significantly in the United States, several talented cake designers are showcasing work inspired by India. Here are three in the New York City area who are turning the wedding cake into a centerpiece event instead of a forgotten side-show.

Surbhi Sahni, Bittersweet NYC:

The only one of the trio with a professional culinary background, Ms. Sahni, 37, got her training at the Sheraton Hotel Management School in India. She then moved to New York City where she received a master’s degree from New York University in food anthropology before working in pastry at notable Manhattan restaurants like Picholine. She also worked in several high-end Indian eateries, including the Michelin-starred Tulsi, where she still runs the dessert program (the head chef, Hemant Mathur, is her husband).

She started Bittersweet NYC two years ago in part to work on special event cakes, and she has since become a coveted hire for Indian and non-Indian weddings.

Her creations stand out for their flavors. “One of my favorite snacks growing up was fruit chaat, so I’ve always thought that spices work really well with sweets. And I try to bring a spice undertone into the cakes I make,” she said. Her nonstandard fillings include green cardamom pistachio cake with chai buttercream and a pineapple cake with black peppercorn and mascarpone cream filling.

She always tries to connect the cake’s adornment to the wedding. For a peacock-themed wedding, for example, she came up with a five-tiered cake decked with hand-painted peacock feathers and thin strips of blue ribbon. She particularly enjoys bringing in elements of the bride’s jewelry, recently making a chocolate cake with a re-creation of the bride’s pearl, emerald and amethyst pendant. Ms. Sahni also does vegan and eggless variations. Prices start at $500.

Sandhya Patangay, Crème-Delicious:

Growing up in Mumbai, Ms. Patangay, 40, learned the art of henna painting, and a decade ago she started a henna company serving the tri-state area. Institutions like the Museum of Natural History hired her to teach henna workshops, and when attendees saw the intricacy of her designs, they told her she would make a skilled cake decorator.

She practiced adorning a few cakes with her henna patterns. “I sent the pictures to a few food bloggers, and before I knew it, I was inundated with requests from people wanting to buy the cakes,” she said.

She started Crème Delicious a year ago and has quickly built a name for herself for her minute henna masterpieces. “From a cultural standpoint, cakes are not a vital part of Indian weddings, and I thought I needed to try to reach a broader audience, which is why I focused on the smaller size,” she said.

She makes cakes in two shapes, a heart and a square, and five flavors — chocolate, green tea, pink champagne, red velvet and vanilla. Larger, multi-tiered cakes can also be ordered. Prices start at $25 for one individual cake, and a minimum order of four is required.

Parul Patel, The Cake Designer:

As a strict vegetarian who didn’t eat eggs, Parul Patel, 41, was frustrated by the lack of good options when it came to eggless cakes. She worked as a Morgan Stanley financial adviser, but she enjoyed baking as a hobby. She turned her weekend pastime into her main gig around her son’s second birthday five years ago, when she visited an Indian vegetarian bakery and asked them to make a Thomas the Train cake without eggs for his party.

“The owner looked at me blankly and said he would have no idea how to do something like that,” she said. She ended up baking it herself, and the positive feedback she received from family and friends encouraged her to go into business.

Today, she and her team of three work out of a 2,000-square-foot kitchen in Millington, New Jersey, and her business has expanded to include special-event and wedding cakes. Examples of her recent work include a three-tiered affair coated in orange fondant and decorated with a henna pattern, minute sugared diamonds that look like mirrors, edible gold beads and glitter.

Besides the basic offerings like vanilla buttercream and chocolate mousse, filling options include gajar ka halwa, cardamom and pistachio, mango mousse and saffron and almond.

Though she expected her clientele to be mostly Indians who avoided eggs, Ms. Patel said that more than half are non-vegetarians and non-Indians. She can also make vegan cakes. Prices start at $250.

Bride-To-Be’s Wedding Plans Burn In The High Park Fire

FORT COLLINS, Colo. (CBS4) – One of the many people affected by the High Park Fire is a bride-to-be who had her big day all planned until the cabin she had reserved for the wedding and reception went up in flames.

Such venues are booked months and months in advance, especially for a June wedding. Carrie Hansel has 100-plus guests coming to Fort Collins in 11 days, but right now the guests and the wedding party have nowhere to go.

“I tried to keep up hope. I was really hopeful but it just went right over where the cabin was,” Hansel said.

Somewhere in the fire a beautiful cabin that Hansel and her fiance reserved last year for their wedding burned to the ground.

“It was kind of tucked away in the mountains and overlooked the trees,” she said. “It’s just a beautiful setting. We found out last Thursday it was lost in the fire.”

They found their perfect spot for the wedding and reception on the Vacation Rentals by Owner website. One-hundred wedding guests have booked their travel reservations to go there.

“It just makes me sad. I get a little teary over it.”

Hansel says finding somewhere else to have her wedding in just 11 days is proving nearly impossible. Still, watching the blaze she says she’s keeping her cool realizing that her dream for one day went up in smoke, but for many there, their dreams of a lifetime are gone.

Hansel says her aunt says that a disastrous wedding means a happy marriage. She’s hoping that old wives tale proves true.

Weddings are one of the most important and exciting occasions in Indian culture. An Indian wedding involves way more people than the bride and the groom and their immediate families. It involves the extended family, friends, colleagues, the entire neighbourhood and the list goes on. From the moment the wedding is fixed, the first thing that is served to celebrate this news is something sweet.

The pleasure that sweets give us is considered divine, thus sweets are believed to be food of the Gods. Sweets are a must in every Indian household. Festivals and happy occasions are rejoiced by indulging in rich and sinful Indian desserts. The Big Fat Indian Weddings are known for their extravagance and will not be complete without great food and an array of desserts. Handmade and carefully crafted, the list of Indian desserts is very extensive.

Indian sweet is known to speak the language of culture, tradition love, yet its very presence can make the strongest of hearts melt into infidelity… for when your eyes see more than one variety, it is tough to stay loyal to a single flavour.

As people are travelling out more than ever they are able to savour a variety of sweet meats in Europe and America. When they come back, they look for similar flavours and quality here. It is this awareness and demand that has made Indian sweet makers to adapt to the changing demands. This innovative outlook has given new dimensions to the sweets of India.

Sweets in Indian weddings have gone bigger with time, they are not only restricted to traditional sweets but lots of innovation is being done with them.

Today there is a plethora of mithais at Indian weddings. Also there are a lot more variations and flavours available in Indian desserts than ever before. Like chocolate barfi, butterscotch halwa, akhrot barfi, banana halwa, and dry fruit jalebi, to name a few.

Nowadays you will see live counters set up for dishing out fresh Indian desserts at weddings. The idea is to be able to serve hot desserts so that they are piping hot and cold ones cold. Also presentation is very important and caterers are going out of their way to enhance the guest experience. Quite often these days, desserts are made in mini sizes and served pre-plated as compared to before where you would be given a separate bowl along with your dinner plate for standard and common wedding sweets like gulab jamun. The bite-sized desserts allow you to try out the various options on the spread. Another trend catching up at weddings is a themed dessert bar counter. For example, a mango theme, wherein all your desserts will be mango-based or a strawberry- and chocolate-themed dessert counter in which all wedding desserts will be strawberry and chocolate based.

Continental desserts such as black forest gateau, blue berry mousse, chocolate fevillant cake, corn pudding cake, fresh fruit flambé, mocha soufflé, and tiramisu and have become popular in Indian weddings that there is a whole lavish continental dessert counter to satisfy different taste buds. The wedding cake ceremony has become today’s fashion. Couples look forward to cutting that first slice as husband and wife, while the guests may be excited to indulge their sweet tooth with a delicious dessert. “Cake” has achieved a celebrity status of its own.

Important decisions for wedding will include picking out the perfect cake. In the past, all wedding cakes may have been “created equal” but now there are so many varieties to choose from. While most guests forget many specifics about weddings, the wedding cake often stands out in their minds. Here are a few tips to help you find the cake that will impress your guests and make your wedding day perfect.
Taste Testing: Finding the Right Flavour No longer are brides only limited to wedding cakes that are either yellow cakes or white cakes. There are so many flavours of cakes available that it may be hard to choose the one you like the most. Some flavours that are available for you to choose from include carrot, almond, chocolate, hazelnut and yellow-butter.

Complement With Icing and Fillings
When trying to choose the perfect cake, you also need to consider the variety of icings and fillings that are available to make wedding cakes both tasty and beautiful. When you are making a choice of icing, be sure to consider the temperature of the place where you will hold function. If you are having an outdoor wedding in the summer, some types of icing may melt and slide off the cake. So be sure to ask your cake designer to help you pick an icing that will be suitable and long-lasting. There are many new flavours of fillings and icings available as well. Fillings can range from raspberry, strawberry and key lime to mocha, chocolate and caramel. If you like more than one filling consider using several that complement one another.

Enhance with Decorations
Another way to make great wedding cakes is to have them match your wedding theme is by using decorations. You can choose decorations for your cake such as a specific cake-holder, a cake topper or even fountains to go with your cake. If you are having a wedding outdoors, you may choose flower decorations for your cake or a cake topper that incorporates flowers. If your wedding is around Christmas, you may consider topping your cake with a star. No matter what your theme may be, you can use decorations to bring out that theme and enhance your wedding cake.

Dessert Trends have changed, bite-size chocolate cake, beer for dessert and new flavour combinations are just some of the latest sweets to come out of the pastry kitchen.
¢ Unusual combinations: Creative flavour combinations can update any tired old dessert. Bacon and chocolate, chocolate and chili, cream of crab ice cream or caramel apple with crushed wasabi peas are just a sample of new flavour profiles.
¢ Macarons: Not to be confused with the coconut-covered macaroons, these macarons are tiny, buttercream filled desserts that come in an array of pastel colours. Up until a few years ago, macarons could only be found in Paris but have now spread like chocolate icing throughout the US.
¢ Beer for dessert: Dessert and wine have always gone hand-in-hand. Recently, beer has burst onto the scene through dessert pairings and as a dessert ingredient. Beer paired with bread pudding, beer ice cream and beer floats are just some of the ways in which beer is being showcased in the world of sweets.
¢ Deconstruction: This trend is all about the essence of desserts. Chefs are breaking down traditional desserts and presenting them in new and exciting ways.
¢ Bite-sized desserts: The small plate trend has carried over to the finale of the meal as well. Bite-sized cakes satisfy cravings without expanding the waistline.
¢ Fizzy floats: Everything tastes better with ice cream, and soda is no exception. As scoops of sorbet and ice cream get plopped into carbonated drinks (including beer), it’s clear that floats are hot.
¢ Ice cream sandwiches: Artisan ice cream sandwiched between two mini brioche or brownies is only a glimpse into the modern ice cream sandwich. Unusual ice cream flavours and different ingredients bring ice cream sandwiches into the 21st century.

Indian weddings’ sweet treats have gone bigger with time and will grow in future. There will always be room for more trends and innovations. A wedding guest will never be satisfied and there is always scope for new sweets treats.

Christine Bleakley says she has no ‘concrete plans’ for her wedding to Frank Lampard

Since she got engaged to Chelsea star Frank Lampard, Northern Ireland’s Christine Bleakley has faced constant speculation over her wedding plans.

Frank proposed to Christine last year and after an injury forced him to pull out of the Euro 2012 squad it was thought they might take advantage of the break in his schedule to get hitched.

Now a spokesman for the footballer has ended rumours that the couple are planning to tie the knot any time soon.

He said: “There never were any plans for a wedding this year, nor have we made any plans for next year.”

Instead, the couple (below) have jetted off on holiday and look very much in love as they soak up the sun on the Italian Riviera.

Looking stunning in a red string bikini, Christine has been helping Frank get over his disappointment and even took her fiance to watch England beat Sweden in their first win of the tournament.

It has been reported that Christine is telling friends that moving into their newly refurbished home is her and Frank’s priority.

“Their focus is moving into the house in August,” a source close to the couple is quoted as saying.

“Frank will be flying to America to play with Chelsea soon, so the plan now is to get married when there’s more time.”

The couple have endured endless speculation over their big day since TV presenter Christine announced her engagement to the Chelsea player a year ago.

Earlier this month, Christine revealed that she and her fiance have not made much progress on their wedding plans.

“The truth is we’ve planned very little and nothing is set in stone,” she said.

Bleakley started her television career as a runner and then trained to become a floor manager whilst studying for her A-Levels at Bloomfield Collegiate School in Ballyhackamore, Belfast.
